Every year I prep Christmas morning breakfast the night before. Then, while we are opening gifts, breakfast is baking away in the oven. The aroma of apples and cinnamon makes me think of holidays. Bread, straight from the oven is always the best. This cinnamon apple breakfast bread is a wonderful and easy additon to any holiday morning.

Cinnamon Apple Breakfast Bread

Homemade bread is common in our house even before quarantine bread baking became a thing. The difference for our house now is that I’m not the only one baking bread. Both girls have gotten in on bread baking.

I’m never without yeast in the freezer and shared it when friends had trouble finding it.

But, Easy No-Yeast Bread is quite popular in our house. Especially when we want a sweet alternative. I’ve been keeping jars of it mixed up, making it even easier to throw together a loaf of bread.

Turning it into cinnamon apple breakfast bread is so easy!

Most of the time, we don’t even let it cool enough to slice nicely!

To make it even more of a sweet treat, drizzle icing made from powdered sugar, milk, and vanilla over the loaf.

We’ve also made this as muffins. Double the batch and pour the batter into a buttered 9×11″ dish. Then drizzle caramel sauce over it once cooled and you have an easy caramel apple cake!

Cinnamon Apple Breakfast Bread

Prep Time: 10 minutes
Cook Time: 55 minutes 45 seconds
Total Time: 1 hour 5 minutes 45 seconds

Ingredients

  • 3 cups self-rising flour
  • 3 tablespoons of sugar
  • 12 oz can of Sprite, 7-Up, or Gingerale
  • 3-4 apples, diced
  • 1-2 tablespoons of cinnamon
  • 1 tablespoon of butter (optional)

Instructions

  1. Preheat oven to 350 degrees and let a tablespoon of butter melt in the bread pan (or spray the pan with butter-flavored non-stick spray)
  2. Dice up 3-4 apples, skin off or on, your choice (I leave them on), set aside
  3. Mix flour, sugar, and cinnamon together in a mixing bowl (we like a lot of cinnamon)
  4. Pour in the soda and let the flour absorb it for a few minutes and then stir to completely mix the batter
  5. Fold in the diced apples
  6. Using a pastry brush, brush the melted butter around the loaf pan and pour in the batter
  7. Bake for about 45 minutes until golden brown

Notes

If you don't have self-rising flour substitute with 3 cups of all-purpose flour plus 1 tablespoon of baking powder and 1 1/2 teaspoons of salt.
