Neapolitan Cookies

Who’s ready for Christmas? Um, I kinda am… but I never fully feel like I’m ready for Christmas, I get to the point where it’s just Christmas and whatever didn’t get done, doesn’t get done! But, baking Christmas cookies can get crossed off my list (it’s one I have often skipped when short on time, gasp!). I recently went to a cookie exchange at a friend’s house. Note to self: next year, freeze all the cookies received so there is plenty for closer to Christmas. Since I was taking cookies to send home with 18 other people, I turned to my mom for suggestions. I made a little tweak and ended up with Neapolitan Cookies. Making these in a loaf pan and slicing before baking resulted in an easy way to make tons of cookies.

Neapolitan Cookies

The original recipe is by my Grandma Marj. And until I got my hands on the recipe, we called them Ribbon Cookies.

Why the change?

My kids are all allergic to artificial food coloring. It does make it hard to make cookies red and green for Christmas. Sometimes Tasha and I have done some experimenting with ways to naturally color things. Since I was planning on giving these cookies away, I wasn’t worried about using food coloring.

But, as I got ready to look and see if I even had food coloring, I came across a way to color the red or green layer without artificial food coloring.

Aldi offers orange and strawberry jello, something we have started to keep a few boxes of ever since I made Strawberry Pretzel Salad with it.

I was so excited… it didn’t even occur to me it would flavor the red layer strawberry!

Thankfully, it turned out to be a great and now I can easily make this recipe without food coloring.
