It’s day 8 of the 12 Days of Christmas Blog Hop and today is all about Christmas cookies! I have to admit, I haven’t made Christmas cookies in a few years… I hated working in my old kitchen so much, I just didn’t even bother. It wasn’t fun to bake, cook, or anything in there. So, I’ve been really looking forward to today’s post. Figuring this would be a really easy post to put together. All I needed to do was type up my recipe and get a few good pictures to share. Alas, I had an epic fail!

Snowball Cookies…. or Not….
As much of a chocoholic as I am, my favorite Christmas cookie has no chocolate in it at all. My grandma’s butterball cookies have always been one of my all-time favorites. I started making them several years ago and made some modifications to make them gluten-free. The kids started calling them snowball cookies.
In the move, lots of papers I hadn’t looked at in ages, got a quick glance and tossed. So I can’t say I was too surprised when I couldn’t find the recipe. No problem, I’d just ask my mom for it. I was pretty sure my modifications were just using all-purpose gluten-free flour.
When I didn’t get to making the cookies over the weekend, I figured I had plenty of time. Then, suddenly, it was the day before and I needed to get these cookies made and photographed.
Except… instead of coming out of the oven, ready to be rolled into powdered sugar and look like snowballs… they came out completely flat and a crumbled mess!
Take 2 didn’t come out any better!
Since I still really want these cookies, I’m going to have to do some more experimenting and share the results later.
Today, I’ll be re-sharing the Almond Joy cookies Tasha and I came up with a few months ago.
Almond Joy Cookies
Tasha and I used a box of brownie mix, making these super simple cookies. Since she now has to be gluten-free, we are going to try them with gluten-free brownie mix next.
Mix together 2 eggs with 1/4 cup of melted coconut oil. Add in one box of fudgy brownie mix and 1/4 cup flour. Fold in 1/2 cup coconut flakes. Drop by spoonfuls on an ungreased cookie sheet and lightly press a whole almond in the center.
In a 35o degree oven, bake for 9 minutes. Remove to a cooling rack.
