The warm weather automatically leads to my family wanting to be outside more. Throw in lacrosse games and practices and dinners need to be on the table fast. Sometimes we are all eating at different times with our schedules. I want an option for the family to serve themselves something healthy instead of fast or junk food. Plus, swimsuit season will be here before we know it! It’s this time of year I start making more salads for dinner. An old favorite of mine is one my mom always made, Taco Salad.
Taco Salad
I tend to almost always have cooked ground beef in my freezer, year round. In the winter I’ll use it for Shepard’s Pie, chili, tacos, soups, and more. In the warmer months, using that pre-cooked ground beef makes taco salad even easier.
For a little while, we had to cut taco salad from our menu when we realized the kids were allergic to artificial food coloring. Because, Doritos! But, thanks to Aldi, this old favorite is back!!!
Ingredients
- 1 lb ground beef cooked (I like to cook it with onions and green peppers)
- 1/2 bottle of French dressing
- Lettuce or salad mix, whatever you like and lots of it!
- Doritos or equivalent
- Tomatoes (cherry or dice up a large one)
- Shredded cheddar or Mexican cheese
- Optional: taco toppings such as salsa and sour cream
- Combine the cooked ground beef with the French dressing, refrigerate until ready to serve. Mix up the salad with tomatoes, cheese, and anything else you like in your salads (cucumbers, peppers, etc). Toss the beef with the salad. When ready to serve: top with crumbled Doritos and any other desired taco toppings. Refrigerate leftovers without Doritos.
It’s really a completely customizable salad. The thing that makes it the recipe I love is the beef with French dressing (which Aldi’s also has without artificial food coloring) and the Doritos.
